The story
2026 is our third year buying from the Caballeros’ farms in Marcala, Honduras! What first drew us to their coffee was the commitment shown to making their farms environmentally sustainable. They focus on soil quality improvements year on year to ensure not only high level coffees produced but also a viable land to continue this on.
This year we wanted to get something funkier from their lots and have gone for a Catuai grown at their plot ‘La Quebrada’ meaning rocky steep valley. It’s undergone an anaerobic process for 72 hours before washing, making for a clean yet complex cup!
Processing
This has undergone a 72-hour anaerobic washed process meaning depulped coffee ferments in an airtight tank for 72 hours before being rinsed and dried.
