The story

El Buho — Spanish for "the owl" — is a washed decaf sourced from smallholder farmers across the Huila and Tolima regions of Colombia. Both regions sit in the Andean highlands and are well established as some of Colombia's finest coffee growing areas, producing coffees with real sweetness and clarity.

This lot brings together Castillo, Caturra and Colombia varieties from multiple small farms — growers who may not have the infrastructure to process and export independently, but whose coffees are well worth seeking out. Working through trusted green bean suppliers allows us to access lots like this while ensuring the farmers are fairly represented in the supply chain.

We roast our decaf with exactly the same care and intention as everything else in our range. 

Processing

El Buho is decaffeinated using the sugarcane method — one of the most natural and gentle decaffeination processes available. It works by combining high mountain spring water with Ethyl Acetate (EA) of natural origin. Ethyl Acetate is actually present in every coffee cherry in its natural state, as well as in many other fruits and vegetables — so despite the scientific-sounding name, it is a remarkably clean process.

The natural EA used here is derived from sugarcane. The beans are first steamed to open their pores, then repeatedly rinsed with the EA solution to draw out the caffeine. Afterwards they are dried and sealed with a natural wax that has a neutral profile, leaving the flavour and aroma of the coffee completely intact.

Suits stronger brew methods because of it's sweetness. 

Try it like this! - Moka Pot...

Use 11g grind size medium to finer. Fill base with boiling water approx 140g. Assemble and put on the stove over a medium heat. Take off heat when you hear it start to splutter. Serve black or with milk.
