The story
This micro lot is 100% Caturra, the variety originally from Brazil (a natural mutation of red bourbon but more resistant to plant diseases).
Produced by smallholders in rural areas of Aponte, Nariño. Aponte is an indigenous reserve that has its own language, politics, and rules.
The growers here are pioneers of honey processed coffees in Colombia. The weather conditions are perfect for it- relative humidity and low temperatures throughout the whole year, it allows coffees to dry slowly resulting in complex and delicate cup profiles.
Notes of yellow fruit and citrus.
Processing
Honey processed. So the skin and fruit is removed from the bean for drying, but the sticky mucilage is left on!
